🛒 Ingredients (Serves 6–7)
- 300 g butter
- 300 g flour
- 150 g brown sugar
- 4 eggs
- 1 packet baking powder
- Vanilla sugar
- Ground cinnamon
- Zest of 1 lime (grated)
- 1 shortcrust pastry
- 150–200 g banana fruit spread (or any fruit jam)
- 150 g desiccated coconut
👩🍳 Step-by-Step Preparation
- Prepare the Batter
In a bowl, mix brown sugar, eggs, and vanilla sugar until smooth.
Add flour and baking powder, then mix well.
Incorporate the butter until you get a creamy batter. - Pre-Bake the Base
Place the shortcrust pastry into a cake mold.
Prick it with a fork to prevent rising.
Bake for 10 minutes at 180°C. - Add the Layers
- Spread desiccated coconut evenly over the base
- Add a layer of banana fruit spread
- Pour the cake batter on top
(Optional: Add a thin batter layer before the jam for extra softness)
- Bake the Cake
Preheat oven to 180°C (350°F).
Bake for about 30 minutes until golden brown. - Cool & Serve
