Jam Traybake Square Recipe – Easy Soft Cake with Fruit Jam
🍓Jam Traybake Squares
Jam Traybake Squares are:
- A soft sponge cake baked in a tray
- Topped with fruity jam spread
- Finished with a light coconut topping
They’re easy to slice and serve, making them perfect for sharing.
🛒 Ingredients (Serves 4–5)
- 250 g unsalted butter (softened)
- 250 g caster sugar
- 5 medium eggs (lightly beaten)
- 2 tsp vanilla extract
- 275 g self-raising flour
- ½ tsp baking powder
- 2 tbsp milk
- 350 g banana & strawberry fruit spread (or any jam)
- 2 tbsp desiccated coconut
Preparation Method
Step 1: Prepare the Tin
Preheat the oven to 180°C (160°C fan) / Gas Mark 4. Lightly grease a 20.5 x 30.5 cm straight-sided roasting tin and line the base and sides with baking parchment.
Step 2: Cream Butter and Sugar
In a large mixing bowl, use a handheld electric whisk to beat the butter and sugar together until the mixture becomes pale, light, and fluffy.
Step 3: Add Eggs and Vanilla
Gradually add the beaten eggs, mixing well after each addition. If the mixture begins to curdle, add a spoonful of flour to stabilize it. Stir in the vanilla extract and mix until well combined.
Step 4: Fold in Dry Ingredients
Using a large spoon, gently fold in the remaining flour, baking powder, and milk until just combined. Pour the batter into the prepared tin and smooth the surface evenly.
Bake for 25–30 minutes, or until the cake is golden, well-risen, and a skewer inserted into the center comes out clean.
Allow the cake to cool in the tin for 10 minutes, then carefully lift it out using the parchment paper and transfer to a wire rack to cool completely.
Step 5: Add Topping and Serve
Once the cake has completely cooled, remove the baking parchment and place it on a serving board. Stir the Jamco Banana & Strawberry Fruit Spread to loosen it, then spread evenly over the top of the cake. Sprinkle with desiccated coconut.
Cut into squares and serve.
