  • 300 g flour
  • 150 g brown sugar
  • 4 eggs
  • 1 packet baking powder
  • Vanilla sugar
  • Ground cinnamon
  • Zest of 1 lime (grated)
  • 1 shortcrust pastry
  • 150–200 g banana fruit spread (or any fruit jam)
  • 150 g desiccated coconut


👩‍🍳 Step-by-Step Preparation

  1. Prepare the Batter
    In a bowl, mix brown sugar, eggs, and vanilla sugar until smooth.
    Add flour and baking powder, then mix well.
    Incorporate the butter until you get a creamy batter.
  2. Pre-Bake the Base
    Place the shortcrust pastry into a cake mold.
    Prick it with a fork to prevent rising.
    Bake for 10 minutes at 180°C.
  3. Add the Layers
    • Spread desiccated coconut evenly over the base
    • Add a layer of banana fruit spread
    • Pour the cake batter on top
