Jamco Fruit Spreads Blackberry and Banana Swiss Roll

✨ Ingredients (serves 8–10)

Sponge:

  • 4 eggs
  • 100g sugar
  • 100g plain flour
  • 1 tsp vanilla extract
  • Pinch of salt

Filling:

  • Jamco fruit spreads blackberry and banana or  your favourite Jamco fruit spreads.

Optional:

  • Icing sugar (for dusting)


Instructions

  1. Preheat oven
     180°C (160°C fan). Line a rectangular tray (Swiss roll tin).
  2. Whisk eggs & sugar
     Beat for 5–7 minutes until pale, thick, and fluffy (very important for light sponge).
  3. Fold in dry ingredients
     Gently fold in flour, salt, and vanilla (don’t overmix).
  4. Bake
     Pour into the tray, spread evenly, bake for 10–12 minutes until lightly golden.

  • Roll while warm
    • Turn sponge onto baking paper dusted with icing sugar
    • Roll it gently (without filling) and let cool

  • Add the filling
    • Unroll carefully
    • Spread a thin, smooth layer of Jamco fruit spread
  • Roll again
     Roll tightly for a clean swirl.

  • Finish
     Dust with icing sugar and slice ✨
