Jamco Fruit Spreads Thumbprint Cookies

✨ Ingredients (makes 18–20 cookies)

  • 200g unsalted butter (softened)
  • 100g sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 250g plain flour
  • Pinch of salt
  • Jamco fruit spread (any flavour)


Instructions

  1. Preheat oven
     180°C (160°C fan). Line a baking tray.
  2. Cream butter & sugar
     Beat until light and fluffy.
  3. Add wet ingredients
     Mix in egg yolk and vanilla.
  4. Add dry ingredients
     Stir in flour and salt → soft dough forms.
  5. Shape cookies
     Roll into small balls and place on the tray.
  6. Make the thumbprint
     Press gently in the centre of each (use thumb or spoon).
  7. Add the filling
     Spoon a small amount of Jamco fruit spread into each centre
     (keep it smooth, not too much).
  8. Bake
     12–15 minutes until the edges are lightly golden.

Cool completely
